Ingredients
Coconut mix

1½ cups unsweetened coconut milk
- 1 tsp vanilla
- 2 tbsp icing sugar
Blueberry mix
-
1 punnet fresh blueberries
- 2 tbsp lemon juice
- 2 tbsp icing sugar
- 1 orange, squeezed
- 2 scoops Red Shot
Method
Coconut mix
Mix all the ingredients together in a jug and pour into 6 popsicle moulds.
Place in the freezer for 30 minutes to partially freeze.
Blueberry mix
Place all the ingredients into a blender and blend until smooth.
Pour through a sieve (optional, if you prefer a smooth ice block).
Spoon into the center of the partially frozen coconut mix and place back in the freezer until frozen.
When ready to serve, dip the moulds into boiling water to loosen.
Serve immediately.
