Ingredients

  • 2 x trimmed Lamb racks
  • 1 tbsp paprika
  • 1 tbsp salt
  • ¼ tsp dill
  • ¼ tsp celery salt
  • ¼ tsp rosemary
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • 1 scoop Red Shot

 

Method

Combine all rub ingredients and massage into the lamb.

Sear the racks in a pan with olive oil for 3 - 4 minutes and transfer to an oven at 180C for 15 minutes.

Let rest for 20 minutes, and then cut into cutlets as a snack or cut in half as main meal.
